Job ResponsibilityPOSITION SUMMARY:
Setup 2 (two) Sardinian F&B outlet - Fine Dining & Casual Dining. With an emphasis on Sardinian cuisine, candidate is to train all chefs in all aspects of cooking, from sanitation to plating skills. Monitor progress of the chef and take corrective action where needed. Ideal applicant should have at least 7 years operating his own Sardinian restaurant.
DUTIES AND RESPONSIBILITIES:
Setup the operations of at least 2 F&B outlets focusing on Sardinian cuisine - Fine Dining & Casual Dining
Create a menu for both F&B outlets. Menu must emphasise on local seafood products & local suppliers, while maintaining focus on a Sardinian experience for the guest.
In charge of setting up the Sardinian theme of both F&B outlets.
Prepare costing and recipe based on the above menu to create items list
Source and setup suitable kitchen equipment
Create a stock system based on the menu, including sourcing for suppliers, determining par/re-order levels, stock tracking, storage, wastage, etc
Train staff on sourcing of food and stock management
Determine staffing requirements and recruitment
Conduct hands-on training sessions
Train chefs in all aspects of cooking, from sanitation to plating skills
Monitor progress of the chefs and take corrective action where needed
Continue to upgrade skills of local chefs once proficient
Devise sales strategies and monitor performance. Adjust menu or sales strategies when required, eg: set menus, daily specials, special guest requests.
Interact with guests whenever possible and maintain rapport
Train staff on preparing and managing budgets in terms of expenses and food quantities
Work closely with staff to ensure a high standard customer service. Impart basic language and cultural knowledge where possible
Train staff on daily and monthly reporting requirements
Responsible for the F&B Profit & Loss account
Any other tasks which the BOD sees fit
